Next weekend, October 22-24, is the latest installment in the "Counter Culture" series of seminars put on by Culture Magazine! These free seminars offer education and tastings for members of the cheese industry!
Our program director, Carlos, will be in attendance along with several members of the Oldways Cheese Coalition, including: Grafton Village Cheese, Emmi-Roth USA, Le Gruyere, Comte, and Forever Cheese!
The first 2 days of Counter Culture will be packed with cheesy goodness:
-Sunday, October 22nd:
-Introductions, Cheese Science 101, and presentations from cheese makers
-Provided lunch and presentation
-Pairings of wines and Wisconsin cheeses
-Meet the Maker: tastings and conversations with cheesemakers
-Monday, October 23rd:
-Introductions and presentations from cheese makers
-The Art of Mongering
-Happy Hour and a cooking with cheese demonstration
Day 3 will feature a change of pace called "Meat Up" in which attendees will have the chance to learn more about fermented and cured meats!
-Tuesday, October 24th:
-Presentation: Transformation of Meat
-Presentation: Basic Charcuterie handling techniques and open discussion
