NYD is sponsoring the MilkJam educational group as they travel roughly 750 miles around England collecting 2 litres of uncooled raw milk from some of England's most celebrated territorial cheese makers. All the milk collected will come from the same morning's milking (April 14th). It will be kept above 12C for the journey. Once back in London, these unique microbial communities (ie the milk samples) will be encouraged to flourish in an incubator for 24-36 hours at 35C. On the evening of the RMCAD, the incubated milks will be presented at a private tasting held by NYD.
